This Garlic Butter Steak and Potatoes is the kind of hearty, comforting dinner that feels extra special without being too complicated to make at home. Bite-size pieces of steak cook quickly on the stove while the potatoes roast in the oven, then everything gets tossed together in a rich garlic butter sauce at the end. It’s an easy, satisfying meal that brings big cozy flavor to the table on nights when you want something filling and delicious.

I have made this recipe several times over the years, and if you know anything about me you will know it’s because my life is chaos and I didn’t have a whole lot of time to cook. This recipe takes a little bit more time and effort than most things that I cook, but I can promise you that it’s so worth it.
My husband loves this one, and requests it time and time again, but I only usually attempt it if I have the time and the energy, and if he did something really good and needs some positive reinforcement and a reward in the form of food. But if you have someone that loves meat and potatoes in your house, they are going to love this one.

Ingredient notes…
Here is what you’ll need to make this Garlic Butter Steak and Potatoes recipe. Please be sure to check the recipe card for the exact ingredients and measurements.
Steak: I used ribeye this time because I happened to find some on sale but you can use any cut that you prefer.
Soy sauce: Used to marinate the steak and give it a punch of flavor. If you don’t like soy sauce you could always use something else that you prefer, even BBQ sauce. I do recommend at least trying it with the soy sauce though. I’m not a big soy sauce person and I love it in this recipe.
Potatoes: I used baby potatoes because it’s what I hand on hand. But red potatoes, Yukon gold, or russet’s work as well.
Olive oil: Used to cook the steak, season the potatoes and help get them crispy. I love to use flavored olive oil (I think this time I used Rosemary) but plain or something else like avocado oil would work fine too.
Onion powder: Used to season the steak. You can omit or use whatever seasoning you like.
Garlic powder: Used to season the steak. You can omit or use whatever seasoning you like.
Cowboy Butter seasoning: Used to season the steak. You can omit or use whatever seasoning you like. Steak spice would work well here also.
Roasted veggie seasoning: Used to season the potatoes. You can omit or use whatever seasoning you like. Ranch, garlic powder, or seasoning salt would also be delicious.
Butter: Used to make a sauce to go with the steak and potatoes.
Garlic: Used to flavor the butter sauce.

Equipment I swear by…
- A large non-stick skillet or pan
- A sheet pan
- Parchment paper to keep the potatoes from sticking and keep cleanup to a minimum
While the Garlic Butter Steak and Potatoes cook…
You won’t have a lot of hands-free time with this one, but you can always:
- listen to your favorite music
- have a quick dance party in the kitchen while cooking
- tell someone you appreciate them
How to make it…
- Cut the steak and potatoes into bite-sized pieces.
- Marinate the steak in soy sauce, onion powder, garlic powder, and cowboy butter seasoning. Let sit for anywhere from 10-30 minutes to develop that flavor.
- Evenly cover potatoes with olive oil and roasted veggie seasoning and place them on a parchment paper lined baking sheet. Space them evenly apart so they have room to cook. Place in oven.
- Heat skillet on medium-high heat, use some olive oil to prevent steak from sticking and cook for 2-3 minutes on one side and then flip. Cook to your preferred doneness.
- When steak is almost done, add butter and garlic. Toss in the cooked potatoes and mix well. Remove from heat to prevent overcooking and serve.

My tips and tricks to make this recipe…
Increase the veggies: You could add more veggies to the sheet pan with the potatoes, such as broccoli, but I would be aware of the cooking time, as they may need more or less time than the potatoes.
To make it saucier: I find this creates the perfect amount of sauce to evenly coat all the steak and potatoes, but if you LOVE sauce and butter you could always double the butter and garlic so you have lots of sauce left.
To make it creamy: Add some cheese, or some heavy cream to the garlic butter sauce to make it creamier.
Storage notes:
Refrigerate: Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days. To reheat I would put in the air fryer, or slowly reheat in the skillet. You could also reheat in the microwave slowly but be careful not to overcook.
Freeze: I have not tested freezing this recipe yet, as there is never enough leftover to freeze, but I suspect freezing this recipe would change the consistency and might make everything mushy. If you try it let me know.

- Marinate the steak in soy sauce, onion powder, garlic powder, and cowboy butter seasoning. Let sit for anywhere from 10-30 minutes to develop that flavor (I recommend not more than a few hours or you risk over marinating it and changing the consistency).
- Evenly cover potatoes with olive oil and roasted veggie seasoning and place them on a parchment paper lined baking sheet. Space them evenly apart so they have room to cook. Place in oven and bake at 400F until done (anywhere from 25-35 minutes depending on your oven and type of potatoes) .
- Heat skillet on medium-high heat, use some olive oil to prevent steak from sticking and cook steak for 2-3 minutes on one side and then flip. Cook steak to your preferred doneness.
- When steak is almost done to your liking, add butter and garlic. Add in the cooked potatoes and mix everything together so it is coated in butter. Remove from heat to prevent overcooking and serve.

My burnout situation…
I’m just going to be honest, I feel like I have backslid a little bit. I’ve been trying to stay removed from work and my situation there as much as I can, but after some urging from some of my favorite coworkers they had me apply for two jobs in a different department than mine.
It is a department I have wanted to go back to for years and years now but because of politics and manipulation of job postings and positions I have been unable to.
Although moving departments would solve some of my work-related stress it wouldn’t solve all of it. But that department feels a lot more gentle, more comfortable, and like my home if it makes sense. So if and when I am ready to return to work, it would have been a great place to return back to.
My coworkers have been begging me to come back for years, so when these job postings went up they made sure to ask me to apply for them. And nope. Unexpected people came completely out of the woodwork.
I can’t help but be disappointed. I was trying my best not to get my hopes up, but I still feel like I did.
My chest tightens and my heart starts racing and I can feel another panic attack coming on when I even just think about returning to work.
I don’t have a return to work date yet, so I’m still just trying to take things one day at a time. Hopefully tomorrow is a better day.
