Cobb Rice Bowls

These Cobb Rice Bowls take everything that people love about a classic Cobb salad and turn it into a hearty, satisfying meal over rice. With all the familiar toppings in one cozy bowl, it’s a simple recipe that feels fresh, filling, and easy to pull together. It’s the perfect way to make a salad-inspired dinner feel a little more comforting.

Rice bowls are seriously one of my most favorite things right now. I’m honestly a little sad that I didn’t discover them much sooner in life, because I spent so long ordering salads at restaurants or making salads at home just to eat all of the toppings and leave the lettuce behind.

Knowing that I could have upped the game with rice instead of the boring filler that is lettuce, would have changed everything for me.

So the other night, while craving a rice bowl, I took a peak at what ingredients I had to work with in my fridge and quickly realized I had all the ingredients for a Cobb Salad.

And thus this Cobb Rice Bowls recipe was born. I hope you enjoy it as much as my husband and I did.

Ingredient notes…

Here is what you’ll need to make this Cobb Rice Bowls recipe. Please be sure to check the recipe card for the exact ingredients and measurements.

  • Cooked chicken: I had a rotisserie chicken, but you can use any leftover chicken you have in the fridge as well. You could also use another type of protein, or even skip the protein if you prefer, but then it isn’t exactly a “Cobb” rice bowl.
  • Rice: I just used instant white rice, but you can use any kind of rice that you desire. You could also substitute for something else like potatoes, pasta, or lettuce if you want to turn it back into a salad.
  • Bacon: I used precooked bacon bits.
  • Eggs: I cut up some hardboiled eggs I had in the fridge.
  • Tomatoes: I used cherry tomatoes, but you can use any kind that you want.
  • Green onions: Used for flavor and to give it a bit of a kick. You could probably use red onion instead if you wanted.
  • Avocado: Adds some creaminess and deliciousness. You can always omit it if you prefer.
  • Shredded cheese: I used mozzarella cheese, because my husband and I don’t like blue cheese, but you could use it if you want, or any other type of cheese.
  • Ranch dressing: Again, some places will use ranch dressing and some will use blue cheese dressing. I don’t like blue cheese dressing, so I used Ranch, but you can use whatever you prefer. I do also have an amazing homemade recipe for ranch if you want it.

  • A good sharp knife, or
  • A veggie chopper

How to make it…

  1. Cook your rice according to instructions.
  2. While the rice is cooking, chop and prep your ingredients. Make your ranch if not using store bought.
  3. Add some cooked rice, cooked chicken, bacon, egg, veggies and cheese to a bowl and top with your sauce.
  4. Enjoy.

My tips and tricks to make this Easy Big Mac Bowls recipe…

Variations: Rice bowls are extremely customizable. If you don’t care about it tasting like an authentic Cobb salad, you could use any type of protein like ground beef, shrimp, steak, or pork. You can also switch up/add any veggies that you want.

Storage notes:

Refrigerate: This recipe keeps the best if you store the ingredients in separate airtight containers. I put my rice in one container, my chicken in another, my sauce in another, and my veggies in another, or a few separate containers and then I assemble when needed. Enjoy within 3 to 4 days.

Freeze: This recipe doesn’t freeze well.

  • 1 cup Bacon I used bacon bits

My burnout situation…

I don’t leave the house much right now.

I know that might be the healthiest thing, but I still don’t have a ton of energy. So I will leave the house to go to my medical appointments, to go for a walk, to go for groceries, or very occasionally to do something like go for coffee with a friend, but the rest of the time I’ve been spending at home.

And honestly I love it. I’m not one of those people that gets stir crazy and doesn’t want to be at home. I love my home.

But I’m going to be going up to my families property for a cute “camping” trip with my husband, his father, my father, my sister and her husband. They like to fish and all that good stuff, so it should be tons of fun.

I’m actually really excited for it.

So I will let you know how it goes!

Conclusion…

I think this rice bowl recipe might seem like it’s a little out of the box, but it’s actually really delicious.

Sharing these recipes has really helped to want to experiment and try new things, or even to try old things that I didn’t used to like but maybe will like now…

Except for blue cheese.. because yuck.
