This Dump and Bake Creamy Boursin Gnocchi is the kind of easy comfort food that feels like it makes a hard day a little bit better. Everything gets added to one dish and baked in the oven, so you get a rich, creamy, cozy dinner without a sink full of dishes waiting for you after. I had been making a one pot version of this recipe for years now, but the other day I decided to get creative and see if I could make the cooking process even easier by turning it into a dump and bake recipe.
On days that you are busy, exhausted, or just completely over it, the last thing I know I feel like doing is standing and babysitting the food I am cooking on the stove. There is something about being able to just combine a bunch of ingredients and walk away while it cooks so you can look after the kids, or tackle something on your to-do-list or just relax.
It took a few attempts and a little tweaking, but I finally knocked out a recipe that I am extremely happy with.

Here is what you’ll need to make this Dump and Bake Creamy Boursin Gnocchi recipe. Please be sure to check the recipe card for the exact ingredients and measurements.
- Boursin cheese: a deliciously creamy type of cream cheese. My favorite is the garlic and fine herbs one, and that’s what I used for this recipe. You could always use another type, or even just a block of plain cream cheese if needed. I would add a little bit more garlic and herb seasoning or something if I did that.
- Gnocchi: I used a whole package of potato gnocchi. Not the stuffed or refrigerated kind that you can sometimes find, but the plain kind that is in the pasta isle.
- Onion: Gives the dish a savory depth. You can always omit it if someone is not a fan of onions.
- Garlic: Adds flavor to the dish. Omit it if needed.
- Mushrooms: I used white button mushrooms, but you could always use another kind, or a mixture of kinds.
- Beef broth: Used to add flavor and soften the ingredients. I used beef broth but you could always use another kind.
- Heavy Cream: To thicken at the end and add a bit more creaminess. You could always use half and half, milk, coconut milk, or omit it if needed, but be aware it may change the consistency and taste of the recipe.
- Garlic Powder: To add flavoring. Use any kind of seasoning you prefer.
- Italian Seasoning: To add flavor. Use any kind of seasoning you prefer.

- A long shaped baking dish. I used a 8.9 Inch by 13.2 Inch – 3 Qt Pyrex one

How to make it…
- Place the circle of Boursin cheese in the middle of the baking dish. Pour in the gnocchi around it. Add the mushrooms, garlic, onions, seasonings, and beef broth.
- Bake uncovered, add the heavy cream and mix.
- Let sit for a few minutes to thicken and then serve.

My tips and tricks to make this recipe…
Increase the protein: Add cooked chicken, sausage, or even cooked shrimp at the end when you add the heavy cream.
Increase the veggies: Add a few handfuls of spinach at the end, or some peas to increase the veggies.
Not as heavy: This recipe is pretty rich. If that is something you are worried about, you could always omit the heavy cream and add an extra cup of beef broth.
Storage notes:
Refrigerate: This dish tastes even better the next day. The gnocchi will continue to absorb the sauce as it sits, so you can always add some more beef broth while reheating. Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days.
Freeze: If find that the gnocchi and dairy doesn’t freeze and reheat very well, so I wouldn’t recommend it personally. If you do decide to try it, let me know how it went in the comments below.

Ingredients
- 1 pack Boursin cheese 5.2oz or 150g
- 1 package Gnocchi uncooked (about a pound)
- 1 medium Onion chopped (2 cups)
- 2 tbsp Garlic minced
- 3 cups Mushrooms sliced
- 3 cups Beef broth
- 1 cup Heavy Cream
- 2 tbsp Garlic Powder
- 1 tbsp Italian Seasoning
Instructions
- Place the circle of Boursin cheese in the middle of a glass baking dish.
- Pour in the gnocchi around it. Add the mushrooms, garlic, onions, seasonings, and beef broth.
- Bake uncovered in the oven at 400F for 25-30 minutes.
- Add the heavy cream and mix.
- Let sit for a few minutes to thicken and then serve.

My burnout situation…
People have been asking how my husband has been through all of this, and I just want to say he has been very supportive. He has been telling me he thinks I need to take a stress leave, or even quit my job for years now. So I think that when I finally got put on leave he was very relieved.
I was not acting like myself for a very long time. I was so stressed and burned out that I couldn’t function at home. I would come home and need to immediately climb into bed and not move until the morning when it was time to go to work again the next day. Eight times out of ten when I came home and he asked me how my day was I would burst into frustrated, exhausted tears.
And I still am not quite back to myself, or fully healed or rested by any means, but he has said he could see the instant weight that lifted off my shoulders.
Now I think the issue is the fact that his job hasn’t been the greatest lately, and he wishes he could be at home to spend time with me.
I love that man.
