Crockpot Honey Garlic Chicken Noodles

It’s a simple, comforting meal that feels delicious with minimal effort.

I’m going to be fully honest here I created this recipe for my husband, and him alone. While I love chicken, and I love noodles, I’m not a huge fan of like… sweet dinner foods if that makes sense. I don’t love honey garlic, or teriyaki sauce. When we order Chinese Food, which is my husband’s ultimate favorite food, I don’t eat the orange chicken, or lemon chicken, or anything like that. I don’t like plum sauce, that kind of thing.

But my mother used to make a recipe sort of similar to this growing up, so I decided to alter it a bit more to a recipe that I knew my husband would love.

But I actually thought this one was pretty delicious and I gobbled up a bowl of it.

So if you are anything like my husband and you love honey garlic, or those kinds of flavors you are going to love this. This is also the type of recipes that I know my stepsons would also devour, they just haven’t been at home any time that I’ve made it so far.

Ingredient notes…

Here is what you’ll need to make this Crockpot Honey Garlic Chicken Noodles recipe. Please be sure to check the recipe card for the exact ingredients and measurements.

  • Soy sauce: Helps to add flavor to the sauce. Could always substitute something like coconut aminos if needed.
  • Ketchup: Adds flavor and sweetness to the sauce. Could use sugar free ketchup if needed, but may change the consistency slightly.
  • Honey: Adds the sweet flavor and helps thicken the sauce.
  • Garlic: Adds to the flavor of the dish. Could omit if needed and add more garlic p0wder.
  • Onion powder: Adds flavor.
  • Garlic powder: Adds flavor.
  • Chicken broth: Helps create the sauce and cook the chicken thighs.
  • Chicken thighs: I use chicken thighs in my recipes because I find they are more flavorful and harder to dry out, but you can always use chicken breasts if you prefer, or could use another type of meat if you wish, you just may have to adjust cooking time/and/or method.
  • Ramen noodles: I just used two packets of instant ramen noodles. The kind that come in the packages with the seasoning in the little silver pouch.
  • Frozen veggies: I added some veggies to add some texture, color, and flavor, but you could use fresh veggies, or omit if you want.
  • Sesame seeds: To top if you wish.

How to make it…

  1. Add the chicken broth, soy sauce, ketchup, honey, and garlic to the crockpot and mix.
  2. Add the chicken thighs, and top with the garlic and onion powder.
  3. Cook on low for 6 hours or high for 4 hours.
  4. When there is about half an hour left in the cooking time, shred the chicken thighs right in the crockpot with tongs, forks, or take out and cut into pieces if you prefer and add back to the crockpot. Add two packs of raw noodles, and the frozen veggies.
  5. Cook for the remaining half an hour, mix well and serve. Enjoy.

My tips and tricks to make this Crockpot Honey Garlic Chicken Noodles recipe…

Spicy: Add hot sauce to the sauce, and/or add jalapenos.

Saucier: There is enough sauce to coat the noodles and veggies and have it be a stickier type of sauce, but if you like things coated in sauce, you could always double the sauce ingredients.

Veggies: Add more cups of frozen veggies if you want more veggies, or you could add different fresh veggies, I would just ensure I cut them into smaller even pieces so they cook faster.

Storage notes:

Refrigerate: Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days.

Freeze: I have never tried to freeze this dish, but I don’t imagine it would freeze well as I feel the instant noodles would become too mushy. If I really wanted to freeze this recipe, I would freeze it without the noodles, and then simply cook them separate and add them when reheated.

  • 1/2 cup Ketchup
  • 1/3 cup Honey
  • 2 tbsp Garlic minced
  • 1 tbsp Onion powder
  • 1 tbsp Garlic powder
  • 1 cup Chicken broth
  • 4-6 Chicken thighs boneless, skinless thighs or breasts
  • 2 packs Ramen noodles just the noodles
  • 2 cups Frozen veggies
  • Sesame seeds for topping

Instructions

  • Add the chicken broth, soy sauce, ketchup, honey, and garlic to the crockpot and mix.
  • Add the chicken thighs, and top with the garlic and onion powder.

My burnout situation…

It’s a weird feeling to know that everything you worked your entire life for, may no longer be right for you anymore.

I said that to my therapist the other day. That I felt like I had made all these wrong decisions and suddenly just woke up and kind of went “wow, how did I even end up here?!”

Have you ever felt like that before?

However, thankfully my therapist was there to remind me that I didn’t know that things were going to turn out like this in my life. No one has a crystal ball where they can see into the future.

I made the best decisions I could with the information I had at the time.

Everything else that happened was completely out of my control.

And I think that’s an important reminder for people out there.

It can be so easy for so many of us to attack ourselves or shame ourselves for decisions we have made. But we all need to be kinder to ourselves and give ourselves grace.

I am smart.

I am capable.

I will figure things out.
