This Dump and Bake Roast Chicken with Baby Potatoes and Green Beans is the kind of easy oven dinner that helps supper feel simple without giving up comfort or flavor. Everything gets coated in seasoning, roasted with chicken broth, and baked together until the chicken is tender, the potatoes are soft, and the green beans are perfectly cooked. It’s a delicious, wholesome meal that feels a little lighter while still being cozy and satisfying.

Not too long ago I was craving something lighter, yet also filling for supper. I knew I had some baby potatoes left to cook, and I had picked up some green beans that looked delicious too. The issue was that I didn’t have enough time to throw them into the crockpot like I would normally be tempted to.
I also didn’t have a ton of energy to sit and fuss over the stove, so I started wondering if I would be able to combine some of my other recipes and cooking methods to make those ingredients into an easy yet delicious dump and bake recipe. It took a little tweaking, but it worked.

- you don’t have a lot of hands on time or energy to cook
- you want something healthy, yet filling
- you want something even the husband and kids will eat (they may just have to pick around the green beans if they don’t like them… mine don’t normally like green beans but they ate them in this recipe)
Ingredient notes…
Here is what you’ll need to make this Dump and Bake Chicken with Baby Potatoes and Green Beans recipe. Please be sure to check the recipe card for the exact ingredients and measurements.
- Chicken: I used boneless, skinless Chicken Thighs because they are harder to dry out so they can withstand the heat and time it takes to also cook the potatoes and the green beans at the same time. You could try chicken breasts instead, but you would need to keep a close eye on them, and depending on the thickness you may need to cook them for more or less time than the other ingredients.
- Potatoes: I used baby potatoes because it’s what I had on hand, but you could always use any other kind of potato. If using another type I would suggest dicing up into smaller even-sized pieces so they cook faster, and evenly.
- Green Beans: You can always use another type of vegetable if you wish, or omit them completely if you don’t like them. But again, you might need to cook for more or less time depending on the type of vegetable you use.
- Lemon juice: Used to marinate and flavor the chicken. You can omit if you wish, or if needed, and just use olive oil instead.
- Chicken broth: Used to help soften the vegetables, keep things moist, and make a sauce at the end. You could always substitute for another type of broth like veggie broth if needed.
- Olive oil: Used to season the chicken and veggies. You need some type of cooking oil to help the seasoning stick, but could use another type of oil or even butter if you prefer.
- Garlic powder: Used to season the chicken. Omit or use any other type of seasoning you prefer.
- Onion powder: Used to season the chicken. Omit or use any other type of seasoning you prefer.
- Paprika: Used to season the chicken. Omit or use any other type of seasoning you prefer.
- Roast chicken seasoning: Used to season the chicken. Omit or use any other type of seasoning you prefer.
- Vegetable seasoning: Used to season the vegetables. Omit or use any other type of seasoning you prefer.

Equipment I swear by…
- A long shaped baking dish. I used a 8.9 Inch by 13.2 Inch – 3 Qt Pyrex one
- A bowl with a lid to help season everything (and if you see my videos I love to shake the bowl)

How to make it…
- Toss the baby potatoes with olive oil and vegetable seasoning and spread on the baking dish.
- Toss the green beans with olive oil and vegetable seasoning and spread on the baking dish.
- Toss the chicken with olive oil, lemon juice, garlic powder, onion powder, paprika and roast chicken seasoning. Optional: Let marinate for anywhere from 5-30 minutes. Spread the chicken thighs on top of the potatoes and green beans and add the chicken broth.
- Bake for 40-50 minutes until the chicken is cooked through and the baby potatoes are fork tender.
- Rest for a few minutes, cover with the sauce from the bottom of the pan if you wish, and then serve.

My tips and tricks to make this recipe…
Increase the veggies: You can always substitute veggies if you don’t like or have green beans on hand or add extra veggies. Just make sure things are chopped into smaller pieces to help cook faster, and test them before you remove them from the oven. Something like carrots, asparagus or broccoli would be great.
Make it cheesy: In the last 10 minutes of baking you could add some parmesan, or any other type of cheese to the top and return it back to the oven so the cheese melts on top of it.
Add bacon bits: Add bacon for even more protein and to add a smokey flavor.
Spice it up: Add some cayenne pepper as seasoning, or even hot sauce if you like things spicy.
Storage notes:
Refrigerate: Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days. Reheat in the oven or an air fryer for the best texture.
Freeze: This recipe is great in the freezer. You could season everything first, store it in freezer bags in the freezer and then thaw it the night before you want to cook it.

- 1 pound Green Beans
- 3 tbsp Lemon juice
- 1 cup Chicken broth
- 6 tbsp Olive oil
- 1 tbsp Garlic powder
- 1 tbsp Onion powder
- 1/2 tbsp Paprika
- 1 tbsp Roast chicken seasoning
- 4 tbsp Vegetable seasoning
Instructions
- Toss the baby potatoes with 2 tbsp of the olive oil and 2 tbsp of the vegetable seasoning and spread on the baking dish.
- Toss the green beans with 2 tbsp of the olive oil and the remaining vegetable seasoning and spread on the baking dish.
- Toss the chicken with remaining olive oil, lemon juice, garlic powder, onion powder, paprika and roast chicken seasoning.
- Optional: Let chicken marinate for anywhere from 5-30 minutes.
- Spread the chicken thighs on top of the potatoes and green beans and add the chicken broth.
- Bake for 40-50 minutes at 425 F until the chicken is cooked all the way through and the baby potatoes are fork tender. [This will depend on strength and type of oven]
- Rest for a few minutes, cover with the sauce from the bottom of the pan if you wish, and then serve.

My burnout situation…
I have really been struggling a lot lately, and to be honest I think the people around me are really concerned. I think it’s just that everything all at once is kind of getting to me, and it almost feels like I can never catch a break or just have anything really good happen to me.
It always seems to be something.
And I struggle a lot with executive dysfunction and really getting going or tackling tasks unless it feels like I’m already in motion. It seems like the only thing that really helps lately is making sure I get up and immediately take my medication, or else I really struggle with getting myself out of bed and getting moving for the day.
I know many people probably struggle with that.
It also doesn’t help that I’ve been diagnosed with depression, and it’s really interesting because I’m not usually sad. My therapist said “you have all the symptoms of severe depression except the sadness part”. Which is kind of strange.
In a way sometimes I feel like I’m too exhausted to be sad. If that makes sense.
Anyways, I do know that this healing journey is a rollercoaster and there will be good and bad days. So right now I’m just hanging on and surviving the bad ones while I wait for the good to come.
