I don’t know why, but when I was overwhelmed and working I used to think of soup as this meal that had one millions steps and took hours, if not most of the day, to make. But I’ve learned you can also make delicious, comforting, and flavorful soup that is easy and quick as well.

Ingredient notes…

Here is what you’ll need to make this Easy Italian Sausage Gnocchi Soup recipe. Please be sure to check the recipe card for the exact ingredients and measurements.

  • Italian sausage: I love using Italian sausage instead of ground beef in any recipe, or using it in addition to ground beef. It just adds so much flavor and something special. If you don’t have access to Italian sausage you can always use ground beef, ground turkey, or ground chicken instead. You could also completely omit it if you wish.
  • Gnocchi: Adds substance to the soup. You could always substitute with a different type of pasta if you wish, but you may need to adjust cooking time.
  • Heavy cream: Helps to thicken the soup and make it creamy. You can omit if you don’t want it creamy.
  • Onion: Help to season the soup. Omit if you don’t like onions.
  • Garlic: Adds flavor to the soup. Can omit if you wish.
  • Italian Seasoning: Adds flavor to the soup. Omit or substitute if you wish.
  • Garlic powder: Adds flavor to the soup. Omit or substitute if you wish.
  • Onion powder: Adds flavor to the soup. Omit or substitute if you wish.
  • Beef Broth: Builds the base of the soup. Can substitute a different type of broth or stock like chicken broth or veggie broth if you prefer.
  • Tomato paste: Adds flavor to the soup. Can omit if you wish.
  • Spinach: Adds something special to the soup. You can omit if you want.
  • Parmesan cheese: Helps to thicken the soup and make it creamy. Omit if you wish or use a different type of cheese.
  • Salt and Pepper: Add these seasonings to your liking.

My tips and tricks to make this Easy Italian Sausage Gnocchi Soup…

Lighter/healthier: Omit the heavy cream and cheese and use low sodium broth and ground turkey or chicken.

Creamy/cheesy: Double the heavy cream and add more cheese.

Storage notes:

Refrigerate: This soup tastes even better the next day, however it will thicken as it sits so you may need to add more beef broth. Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days.

Freeze: This soup freezes well, but the gnocchi can get a little soft when you reheat it. If that is something that may bother you, I would advise making the recipe without the gnocchi, and then cooking it separately and adding it fresh when you are reheating it from frozen.

Are you struggling right now?

  • Use frozen chopped spinach instead of having to chop fresh
  • Use jarred garlic, and frozen prechopped onions or even garlic and onion powder instead if you dread prepping those things and don’t have prechopped/minced (will need to adjust measurements).

My burnout situation…

I do find that cooking is really helping me, when it comes to healing from my burnout, which I find surprising. Like I’ve said before, I used to hate cooking. It was always just one more thing on a never ending to-do-list.

But I think just the act of cooking: chopping, stirring, boiling, is really helping me reconnect with myself and calm my nervous system. It’s helping me to be more present and in the moment, which I didn’t really expect.

I think it’s nice that there are things about my healing journey that are still surprising me.

Conclusion…

This Easy Italian Sausage Gnocchi soup recipe is one that will probably join your regular soup rotation for years to come. I hope you love it.

Take care of yourself.
