Easy Sushi Rice Bowls

These Easy Sushi Rice Bowls are a simple, fresh meal that comes together with hardly any effort. Made with instant white rice, shrimp, avocado, cucumber, and carrots, they’re full of color, texture, and easy flavor. Topped with kewpie mayo and sriracha, this bowl is the perfect mix of cool, creamy, and satisfying.

If you aren’t new here then you know exactly how I feel about rice bowls. I am still obsessed, and I don’t see that obsession going away any time soon.

I’m still a little sad thinking about all the lost time in my life that I could have been eating rice bowls instead of saying no to salads and thinking that “eating healthy” was torture. Eating healthy doesn’t have to been leafy greens or forcing yourself to eat the “healthy” foods you don’t like.

I am going away in a few days so didn’t want to have a bunch of fresh ingredients to go bad in my fridge, so I bought some shrimp from Costco as a protein source and decided to create a rice bowl recipe using some sushi flavors.

It was so good!

Ingredient notes…

Here is what you’ll need to make this Easy Sushi Rice Bowls recipe. Please be sure to check the recipe card for the exact ingredients and measurements.

  • Cooked shrimp: I bought a container of cooked shrimp from Costco in where they have all their assembled oven-ready meals, but you could always buy a shrimp ring, or even a frozen bag of cooked shrimp and thaw them. I’ve used both of them before with this recipe.
  • Rice: I just used instant white rice, but you can use any kind of rice that you desire. Sushi rice would be amazing for this, although I haven’t tested it yet. You could also substitute for something else like potatoes, pasta, quinoa, or lettuce if you want to turn it back into a salad.
  • Cucumber: Adds crunch and freshness.
  • Carrots: I used some shredded carrots I had leftover to add some color.
  • Avocado: Adds some creaminess and deliciousness. You can always omit it if you prefer, or use guacamole instead so you don’t have to worry about having a perfectly ripe one (I’ve done this many times).
  • Sesame seeds or everything bagel seasoning: Adds a little crunch on top.
  • Kewpie mayo: Adds some more creaminess and flavor. Keeps things from getting too dry. You could always use regular mayo if you don’t have kewpie mayo as well.
  • Sriracha sauce: Adds some flavor and heat. Be careful with this stuff if you aren’t used to using it, it’s very spicy.
  • Optional: Seaweed: I have these Seaweed sheets/snacks that I used almost like chips/wraps and scooped up some of the rice bowl and ate it like that.
  • Optional: Soy sauce: If you find it’s still a little dry or you like soy sauce feel free to add some on top.

  • A good sharp knife, or
  • A veggie chopper

How to make it…

  1. Cook your rice according to instructions.
  2. While the rice is cooking, chop and prep your ingredients.
  3. Add some cooked rice, cooked shrimp, and veggies to a bowl. Top with your sauces.
  4. Enjoy.

My tips and tricks to make this Easy Sushi Rice Bowls recipe…

Healthier/lighter: I would put all the ingredients on a bed of lettuce and turn it into a salad instead of the rice. Or you could use quinoa. However, I do find that the rice is more filling.

Less spicy: If you don’t like spicy things I would use less, or even omit the Sriracha. It is very spicy so by careful.

Variations: Rice bowls are extremely customizable. If you don’t care about it being sushi themed, you could use any type of protein like ground beef, shrimp, steak, or pork. You can also switch up/add any veggies that you want.

Storage notes:

Refrigerate: This recipe keeps the best if you store the ingredients in separate airtight containers. I put my rice in one container, my shrimp in another, my sauce in another, and my veggies in another, or a few separate containers and then I assemble when needed. Enjoy within 3 to 4 days.

Freeze: This recipe doesn’t freeze well.

On the hunt for more rice bowl ideas?

My burnout situation…

In my last burnout update I talked a little bit about how therapy has helped me to realize how much I put everyone and everything before myself.

I mean it’s not like it was some huge realization. Obviously reaching total burnout means that I haven’t been taking care of myself properly to begin with. But I think I was always focused on the goal. I don’t think I ever considered the full extent of the damage I was doing to myself by neglecting myself before.

My therapist and I put the pieces together and found the pattern dating back to my childhood of me wanting to always keep the peace and take care of everyone else around me. I always wanted to make sure they were happy and taken care of. I’ve always wanted to solve any problems that have popped up for my friends and family.

Then after I met my husband, I dedicated over a decade of my life to fighting every single day for the lives of my stepsons against a very sick parent and a system that was set up against us. That fight took a lot from me too. More than I would like to admit.

In a way I’ve sacrificed a lot of myself, and that is something I don’t think I will ever be able to get back. The neglect I’ve done to myself has done a lot of damage to my physical and mental health that I’m trying to heal, but I won’t ever be able to fully heal the damage that’s been done unfortunately.

In a way though I guess I am lucky too. Because some people go their entire lives and never learn how much they are neglecting themselves. They never get the chance to fix it, or make it better, or finally start to focus on themselves and what makes them truly happy.

And that is an awfully sad thing.

If this is you at all, I just want to remind you that it’s never too late to start taking care of yourself or making yourself a priority. You matter. Your happiness and your health matters.
