One of my biggest changes that is actually helping me start to enjoy cooking is changing my entire mindset around the process. So many of us women often feel the pressure to keep up with everyone around us. We see other moms posting about delicious and intricate meals. We see the extravagant lunches they packed for their kids. And we compare ourselves to them. We feel guilt and shame that we aren’t “making the same effort”. We wonder what we are doing wrong.

That pressure eats us alive more than we realize and it often adds so much unnecessary stress to our lives. We might see those intricate meals and not realize that mom actually has paid help. We see the extravagant lunches and don’t realize that maybe both parents are stay at home parents and they have lots of free time on their hands.

Part of enjoying cooking, and enjoying life is about making it work for you and your own situation. Not anyone else’s. So something big I’ve been doing is finding creative ways to repurpose leftovers so that making meals takes even less work for me.

These Easy Texas Toast Sloppy Joes are the perfect way to turn your leftovers from the fridge into a whole other meal.

  • Sloppy joe mixture: If you don’t have any sloppy joe mixture leftover, you will need to make this first and plan ahead. I have a really easy and delicious Crockpot Sloppy Joe recipe for you.
  • Texas Toast: You will need a couple of slices of your favorite Texas Toast. I find that the thickness of the bread really helps to hold up to all those toppings and not fall apart in your hands.
  • Cheese: I used shredded Mozzarella cheese but you can use whatever kind you prefer.
  • (Optional) Butter and garlic powder: My Texas Toast already came pre-buttered, but if yours didn’t you will need to make your own. 425 5-7 minutes

My tips and tricks to make this Easy Texas Toast Sloppy Joes recipe…

Toppings: You can add more toppings if you wish. Extra cheese, peppers, tomatoes, or avocado would all be great.

Make it spicy: Mix your favorite hot sauce into the sloppy joe mixture to taste, sprinkle with crushed red pepper, or top with sliced jalapenos.

Make it extra cheesy: Add several different kinds of cheese if you want. Just be careful that the toast, or your cheese doesn’t burn in the oven.

Storage notes:

Refrigerate: Store any leftovers in an airtight container in the fridge. Warm up for a few minutes in the air fryer, or the oven. Enjoy within 3 to 4 days.

Freeze: This recipe would freeze well, but I would freeze the Texas Toast and sloppy joe mixture separately and then simply thaw, assemble and top with cheese when I am ready to make it.

Are you struggling right now…

  • Only make it when you have leftover sloppy joe mixture. (Having to make a whole other recipe first just to make these muffins may overwhelm you)
  • Use pre-shredded cheese instead of shredding your own.

My burnout situation…

I had the strangest thing happen to me today. I was at a therapy appointment, and we had discussed a little bit of my childhood trauma and some of my childhood friendships. And then closer to the end of the appointment I was talking about how I am getting sick of being resilient and how I would just like peace and calmness and for things to go right for me for a change. I basically said I was sick of being strong and just wanted to universe to take things easy on me from now on.

My therapist had an interesting take and said that it doesn’t work that way unfortunately and if I keep that attitude of wishing things were easier, it could backfire on me and I will keep noticing all the things that don’t go right and basically the universe will make it harder on me. That’s why people focus so much on gratitude and things they are thankful for, because by focusing on the positive you notice more positive things etc. She also was like, “watch for signs from the universe reminding you how strong you are. You have been through every hard thing in your life. You can handle more hard things. You will be okay.”

As I walked out of therapy, there was a rabbit just standing in the parking lot behind my car (and we were not close to like the edge of the city or a greenspace or anything. Just by plenty of buildings and busy areas). So as I got into my car and was pondering what seeing rabbits means (haha) a mail van pulled up right behind me and basically blocked me in as I was about to back up.

I got annoyed for a split second, but when the mail lady got out of her van and walked towards the mailbox she saw me sitting in my car and made a motion as if to say she would move if I wanted her to, so I just waved her on and told her to go ahead and I would wait. I honestly wasn’t in a rush and she was working… but as we made eye contact and then she walked away… I realized it was one of my childhood best friends that I had just talked about in therapy and haven’t seen in many years.

So strange.

Conclusion…

The universe may not always make things easy on us, but we can make things easier on ourselves by trying to reduce our own stress and not giving into the pressure to compare ourselves to other people.

These Easy Texas Toast Sloppy Joes are the perfect easy thing to make in the kitchen. I hope you like them.

Take care of yourself.
