Greek Chicken Rice Bowls

This Greek Chicken Rice Bowls recipe is the perfect thing to make when you want something fresh and healthy, but still easy to put together. It takes only a few minutes to throw everything together and is extremely easy to customize to your liking.

I think I’ve always struggled with eating “healthy” because I’m a millennial and I feel like we were raised that eating healthy meant eating lots of salads and green leafy vegetables.

I hate salads and green leafy vegetables.

Okay, well hate is a bit of a stretch, but when I’m hungry the last thing I want to eat is a bowl full of tasteless lettuce, spinach, or kale. Ick.

But as I age and mature, and as the world changes around me, I’ve noticed there is a shift in the online world showing us that healthy doesn’t mean we need to eat foods we don’t like. We can adapt and make healthier choices that we still think taste good and fit our lifestyle. And there are plenty of healthy options out there, salads are not the only option.

And that is where my love of rice bowls entered the picture. I have created hundreds of different types of rice bowls over the years, and my husband urged me to share them with the world, because I’m sure there are people out there that feel the exact same way about “eating healthy” that I do.

So I hope you enjoy my first rice bowl recipe, and know that I have many MANY more coming.

Ingredient notes…

Here is what you’ll need to make this Greek Chicken Rice Bowls recipe. Please be sure to check the recipe card for the exact ingredients and measurements.

  • Tomatoes: I used cherry tomatoes, but you can use any kind that you want.
  • Cucumbers: Adds a crunch and freshness.
  • Red Onion: You could always use a different kind of onion if you prefer or if that’s all you have on hand. Of course you can always omit as well if you don’t like onion.
  • Cooked Chicken: I bought a rotisserie chicken for this, but you can use any kind of cooked meat that you want in this.
  • Black Olives: Could use green olives as well if you want, or omit if you are one of those crazy people who doesn’t like black olives (just kidding I used to hate them).
  • Feta Cheese: You could substitute any other kind of cheese you want if you don’t like, or don’t have feta cheese on hand.
  • Tzatziki: A delicious sauce made from Greek yogurt. And that is saying a lot as I don’t like Greek yogurt. I used store bought to make this recipe even easier, but I hear Tzatziki is pretty easy to make on your own as well.
  • Rice: I just used instant white rice, but you can use any kind of rice that you desire. You could also substitute for something else like potatoes, pasta, or lettuce if you want to be even healthier.
  • Optional: Green peppers: I don’t like green peppers so I didn’t include them, but you can if you like them.

Equipment I swear by…

  • A good sharp knife, or
  • A veggie chopper

How to make it…

  1. Cook your rice according to instructions.
  2. While the rice is cooking, chop and prep your veggies.
  3. Add all of your rice, veggies and cooked chicken to a bowl and add your sauce.
  4. Enjoy

My tips and tricks to make this Greek Chicken Rice Bowls recipe…

Healthier/Lighter: I would put all the ingredients on a bed of lettuce and turn it into a salad instead of the rice. However, I do find that the rice is more filling.

Spicy: Want to add a little kick to this recipe? Add some diced jalapenos or some red pepper flakes.

Variations: Rice bowls are extremely customizable. You could use any type of protein like ground beef, shrimp, steak, or pork. You can also switch up/add any veggies that you want. I just normally use the ingredients that are found in a Greek Salad.

Storage notes:

Refrigerate: This recipe keeps the best if you store the ingredients in separate airtight containers. I put my rice in one container, my chicken in another, my sauce in another, and my veggies in another, or a few separate containers and then I assemble when needed. Enjoy within 3 to 4 days.

Freeze: This recipe doesn’t freeze well. You could always freeze the chicken and the rice, but the veggies won’t thaw the best. I recommend buying fresh veggies for it.

Ingredients

  • 2 cups Tomatoes chopped
  • 2 cups Cucumbers chopped
  • 1 cup Red Onion chopped
  • 4 cups Cooked Chicken can use leftovers or rotisserie
  • 1 cup Black Olives
  • 2 cups Feta Cheese
  • 2 cups Tzatziki
  • 4 cups Rice
  • 1 cup Green peppers Optional

Instructions

  • Cook your rice as per instructions.
  • While rice is cooking chop and prep the rest of your ingredients.
  • Add your cooked rice, chopped veggies, chicken, and cheese to a bowl.
  • Top with sauce and enjoy

My burnout situation…

One of my most favorite things that I have been doing lately while I have the time, is spending more time with my sister. She is my only sister, and is seriously one of my best friends. That’s kind of crazy to say when I think about all the torment and chaos we put each other through growing up.

I’m three years older than her, and so she always wanted to hang around me and my friends and I was always trying to ditch her and get her to leave me and my friends alone because I kept looking at her like my annoying little sister. This lead to us butting heads a lot as teenagers. We would fight over everything. The TV. The computer. The phone. Who was using the dialup internet when one of us was expecting our friends to call. Our fights got pretty bad at times.

But I am so grateful that as we got older and more mature, we grew closer than we have ever been. And now she and her husband come on trips with us all the time, and we have a lot of fun together.

But now that I am on medical leave, and my sister is only working part time right now, we have been making it a priority to hang out and have movie days. We made a huge list of probably hundreds of movies from our childhood that we used to love and are going through the list one by one and watching them all. It’s been a lot of fun and something I am extremely grateful that this leave has given me the opportunity to do.

Conclusion…

Making healthier decisions for yourself doesn’t mean you have to force yourself to eat something or do something you don’t like. You can make healthier decisions that work for your preferences and fit into your lifestyle.

Those decisions are much more reasonable and sustainable anyways.
