This Easy One Pan Hamburger Mushroom Pasta is the kind of hearty, cozy dinner that makes a long day feel a little more manageable. My husband has never been a big leftovers guy. He will make himself a sandwich or a bowl of cereal or something before he would warm up any leftovers from the fridge. But this is one of those recipes where we will literally fight over the leftovers if there isn’t enough left for the both of us.

Here is what you’ll need to make this Easy One Pan Hamburger Mushroom Pasta recipe. Please be sure to check the recipe card for the exact ingredients and measurements.
- Ground Beef: Adds protein and flavor to the recipe. You can trade out for another type of protein if you wish such as chicken, bacon, sausage, steak etc.
- Pasta: I used bowtie pasta because it’s one of my favorites, but again you can use any type of pasta you want. Just be prepared that it may change the cooking time, or the amount of liquid needed in the recipe depending on what type of pasta it is.
- Onion: Gives the dish a savory depth. You can always omit it if someone is not a fan of onions.
- Garlic: Adds flavor to the dish. Omit it if needed.
- Mushrooms: I used white button mushrooms, but you could always use another kind, or a mixture of kinds.
- Beef broth: Used to add flavor and soften the ingredients. I used beef broth but you could always use another kind.
- Cream cheese: To help thicken the sauce and add flavor. You can omit, just keep in mind the sauce won’t be as thick.
- Heavy Cream: To thicken at the end and add a bit more creaminess. You could always use half and half, milk, coconut milk, or omit it if needed, but be aware it may change the consistency and taste of the recipe.
- Garlic Powder: To add flavoring. Use any kind of seasoning you prefer.
- Buttery Steakhouse Seasoning: I used this just to add some flavor to the ground beef. Use any kind of seasoning you prefer.
- Cowboy Butter Seasoning: I used this just to add some flavor to the ground beef. To add flavor. Use any kind of seasoning you prefer.

- A good large non-stick Skillet
- A veggie chopper
- A ground beef meat masher

- Stand quietly and do nothing for one full minute
- Pour yourself a drink
How to make it…

- Start to brown the ground beef in a non-stick skillet over medium-high heat.
- After about 3 or 4 minutes add the diced onion. After another 3 minutes or so add the mushrooms and seasonings. Cook for another 3 or 4 minutes and then add the minced garlic.
- Stir well, let the garlic cook for about a minute and then add the dry pasta and pour the beef broth overtop, ensuring the pasta is submerged in the broth.
- Let simmer for about 10 minutes, stirring occasionally to ensure the pasta is cooking, until the pasta is al dente and then add your cream cheese.
- Mix well until cream cheese is melted, then add in heavy cream and stir.
- Remove from heat and let it thicken for a few minutes before serving.

My tips and tricks to make this recipe…
Healthier/Lighter: Use lean ground beef, remove any excess grease as the ground beef cooks, use skim milk or coconut milk instead of heavy cream, and omit the cream cheese. This will mean the sauce will be thinner and soupier, but you could always use a cornstarch slurry to thicken instead.
Higher protein: Double the meat, use protein pasta, and use blended cottage cheese instead of the heavy cream.
Add veggies: Add any other veggies that you like. Broccoli, frozen peas, spinach, or asparagus would be great additions.
Storage notes:
Refrigerate: This dish tastes even better the next day. The pasta will continue to absorb the sauce as it sits, so you can always add some more beef broth while reheating if you feel it has gotten too thick or there is not enough sauce. Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days.
Freeze: I find that pasta usually doesn’t freeze and reheat very well. But as I said above, there have never been enough leftovers of this recipe for me to freeze so I have never personally tried it. If you do, let me know in the comments below how it went.

My burnout situation…
I have been lucky enough to have many wonderful coworkers in my life. As chaotic as things have become at my workplace, my coworkers have always been the one constant positive. We have gotten each other through some pretty hard days, and I have been blessed to forge some pretty great friendships with several of them.
But one of the things I’m struggling with is trying not to get sucked back into the stress and chaos while I’m on leave. I can tell they are trying their best to not message me as much or not to vent to me, but I also know that sometimes they can’t help it. I couldn’t help it sometimes when something crazy was going down at work and I had coworkers on medical leaves. I had to tell them. I also like to get the occasional update about what is going on so I don’t feel completely out of the loop.
Today I am going for lunch with two of those coworkers, one that is also on a medical leave, and another who is the last one there still holding the place together with her bare hands. Luckily she is almost ready to retire so I think that is what is keeping her going. The knowing she will be done soon. Otherwise I feel like she would be on a leave too.
I’m going to try my best not to get sucked back into all the chaos and not to let what may or may not be happening at work effect me at all so that I can focus on myself, my leave, and my healing from burnout journey.
