These Lemon Herb Mediterranean Chicken Rice Bowls are fresh, colorful, and packed with bright comforting flavor. With chicken, cucumber, tomatoes, avocado, black olives, feta, and a lemon herb dressing, every bite feels light, satisfying, and delicious. It’s the kind of easy bowl recipe that feels wholesome and refreshing while still being more than filling enough for dinner.

I’d just gotten back from a family camping trip up north (I talked a bit about it in my last recipe post), and we had survived up there on the typical camping food: my husband’s award winning chili, h0t dogs and hamburgers, sandwiches, cereal, and eggs and bacon. So when we came back I wanted something a little bit fresher and healthier.
So I decided to alter my Greek Chicken Rice Bowls recipe slightly, and use a different type of dressing and it was so delicious.
The only thing I kind of screwed up was that I forgot to add water to thin out my dressing a bit, so when I poured it onto my bowl it sat on top instead of seeping in. So I ended up having to add a bit of water after the fact that mixing it up. It sounds kind of strange, but it still tasted delicious.

Ingredient notes…
Here is what you’ll need to make this Lemon Herb Mediterranean Chicken Rice Bowls. Please be sure to check the recipe card for the exact ingredients and measurements.
- Tomatoes: I used cherry tomatoes, but you can use any kind that you want.
- Cucumbers: Adds a crunch and freshness.
- Avocado: Adds texture and creaminess.
- Cooked Chicken: I bought these awesome packs of cooked and diced chipotle chicken and they worked out great for this recipe, but you could always use any type of leftovers, and I’ve made it many times with the good old trusty rotisserie chicken.
- Black Olives: Could use green olives as well if you want, or omit if you are one of those crazy people who doesn’t like black olives (just kidding I used to hate them).
- Feta Cheese: You could substitute any other kind of cheese you want if you don’t like, or don’t have feta cheese on hand.
- Lemon Herb Sauce: I made a sauce from scratch for this that was fairly easy, but you could always use a premade sauce or dressing in it’s place.
- Rice: I just used instant white rice, but you can use any kind of rice that you desire. You could also substitute for something else like potatoes, pasta, or lettuce if you want to be even healthier.

- While the rice is cooking, chop and prep your veggies. Make your dressing if you aren’t using a premade one.
- Add all of your rice, veggies and cooked chicken to a bowl and add your sauce.

My tips and tricks to make this Lemon Herb Mediterranean Chicken Rice Bowls recipe…
Healthier/Lighter: I would put all the ingredients on a bed of lettuce and turn it into a salad instead of the rice. However, I do find that the rice is more filling.
Spicy: Want to add a little kick to this recipe? Add some diced jalapenos to the bowl or some red pepper flakes or hot sauce to the dressing.
Variations: Rice bowls are extremely customizable. You could use any type of protein like ground beef, shrimp, steak, or pork. You can also switch up/add any veggies that you want. I just normally use the ingredients that are found in a Greek Salad.
Storage notes:
Refrigerate: This recipe keeps the best if you store the ingredients in separate airtight containers. I put my rice in one container, my chicken in another, my sauce in another, and my veggies in another, or a few separate containers and then I assemble when needed. Enjoy within 3 to 4 days.
Freeze: This recipe doesn’t freeze well. You could always freeze the chicken and the rice, but the veggies won’t thaw the best. I recommend buying fresh veggies for it.

Ingredients
- 2 cups Tomatoes
- 2 cups Cucumbers
- 2 cups Avocado
- 2 cups Cooked Chicken
- 1 cup Black Olives
- 1 cup Feta Cheese
- 2 cups Lemon Herb Sauce
- 4 cups Rice cooked
Lemon Herb Dressing
- 4 tbsp olive oil
- 4 tbsp white wine vinegar or white vinegar or apple cider vinegar
- 4 tbsp lemon juice
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp dried basil
- 1 tbsp dried parsley
- water to desired consistency and taste (suggested 1/3 cup)
- salt and pepper to taste
Instructions
- Cook your rice as per instructions.
- While rice is cooking chop and prep the rest of your ingredients.
- If you are making the dressing, simply mix all the ingredients under the Lemon Herb Dressing section together.
- Add your cooked rice, chopped veggies, chicken, and cheese to a bowl.
- Top with sauce and enjoy

My burnout situation…
I do think that I can feel myself getting better. I’m still not anywhere near ready to go back yet, but I’m starting to feel like I can breathe again, and that has to be something for sure.
It also helps that I don’t still have so many people just non-stop contacting me all the time (benefits people, doctors etc.) so I feel like I can just focus on myself and trying to heal and get better.
I’ve still been working on healthier habits like making sure I actually eat, going for walks, and drinking more water.
And therapy has been going good.
So yeah that’s the update.
Conclusion…
Rice bowls are delicious and so easily customizable. I’m slowly learning that I’ve made things harder on myself than I needed to.
