This One Pan Beef Stroganoff is the kind of cozy, creamy, and delicious dinner that feels extra comforting at the end of a long day. Everything cooks together in one pot, giving you tender beef, rich savory flavor, and a silky sauce without a big pile of dishes. It is a simple, hearty meal that makes dinner feel warm, filling, and easy.

And that is what this recipe is. This is a slightly altered version of the recipe my mother used to make for my sister and I when we were growing up.
So in a way not only is this recipe easy, and incredibly comforting, but it also tastes like my childhood. And I think that is something extra special.

Ingredient notes…
Here is what you’ll need to make this One Pan Beef Stroganoff recipe. Please be sure to check the recipe card below for the exact ingredients and measurements.
- Ground Beef: I used the classic = ground beef. But you could always use something like ground chicken or turkey instead if you really want to.
- Onion: I used onion to add flavor, but you can omit if you wish.
- Garlic: Used to add flavor, but you can omit if you wish.
- Beef broth: Used to cook the noodles and make a deliciously creamy. You could use another type of broth like chicken, or veggie broth or stock.
- Sour cream: This is one of the key ingredients that really makes it a Stroganoff recipe. Without it, it’s just pasta and hamburger.
- Heavy cream: Used to help make the sauce. You could substitute half and half, or milk, but just be aware it may change the consistency of the sauce.
- Pasta: I again went for the classic which is usually egg noodles. But again you don’t have to stick to the classics if you don’t want to and can use whatever type of pasta you prefer.
- Dijon mustard: Adds to the flavor. Again another classic ingredient in a Stroganoff.
- Worcestershire sauce: Adds to the flavor. Again another classic ingredient in a Stroganoff.
- Garlic powder: Added for flavor. Omit if you wish.
- Italian seasoning: Added for flavor. Omit if you wish.
- Paprika powder: Added for flavor. Omit if you wish.

Equipment I swear by…
- A good sharp knife, or
- A veggie chopper
- A good large non-stick Skillet
- A ground beef meat masher

How to make it…

- Brown your ground beef in a large non-stick skillet over medium-high heat. Add onion and garlic.
- Once cooked, stir in your garlic powder, Italian seasoning and Paprika. Add the beef broth, Dijon mustard, and Worcestershire. Add the egg noodles, making sure they are covered as much as possible with the broth.
- Let boil until noodles are al dente.
- Add heavy cream and sour cream.
- Mix until melted and smooth.
- Sauce will thicken as it cools. Enjoy.

My tips and tricks to make this One Pan Beef Stroganoff recipe…
Lighter: Use Greek yogurt instead of the sour cream, use half and half instead of the heavy cream, and use ground turkey instead of the ground beef.
Higher protein: Use protein pasta and double the amount of meat.
More veggies: You could always sneak in veggies like spinach or kale. Or use mushrooms to make it a mushroom stroganoff if you prefer.
Storage notes:
Refrigerate: This dish tastes even better the next day. The pasta will continue to absorb the sauce as it sits, so you can always add some extra beef broth while reheating if you feel it has gotten too thick or there is not enough sauce. Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days.
Freeze: I find that pasta and dairy usually doesn’t freeze and reheat very well. There has never been enough leftovers of this recipe for me to freeze so I have never personally tried it. If you do, let me know in the comments below how it went.

My burnout situation…
I just returned from a wonderful trip up north with some of my family. My dad, my sister, my brother in a law and my husband and I all went together. Growing up, my dad’s sister owned a camp ground, cabins, campsites and a store right beside a really beautiful lake, so my sister and I have many memories of going there growing up.
We used to have family reunions up there, and we even went up there several times with my grandma (who was my literal best friend growing up). We have crazy stories and memories of freaking out when leaches got stuck to us in the lake, beating my cousins at cornhole, and my grandma trying to pet a bear cub that she thought was a dog when she went to the bathroom in the night without her glasses. True story.
So we went up there on my dad’s birthday, and left on my husband’s birthday (and my sister also just had her birthday). It was a lot of fun. My dad used to go up there several times a year, but after his stroke he finds it harder to get up there by himself, and I don’t think I ever remember seeing him so happy. He said it was the best trip he ever had.
We spent time playing card games, sitting by the fire, fishing, watching movies and cooking together, and going on boat rides. It was great and I feel slightly refreshed.
