If you couldn’t tell by now my family (and also especially me) love pasta. I find pasta is something that is very difficult to make and hard to screw up, so pasta dishes are perfect for people that don’t like cooking or are a little unsure of themselves in the kitchen.

Pasta is one of the first things I taught my boys to make as they were getting older and starting to cook for themselves. And it’s something they still routinely cook for themselves to this day.

This recipe is full of everything that I love. Delicious sausage, a creamy herby sauce, and perfectly cooked pasta. I could eat this recipe every single day.

  • Sausage: I used Italian sausage, but you could use another type of sausage like chicken sausage, tofu sausage, or even something like ground beef.
  • Onion: I used onion to add flavor, but you can omit if you wish.
  • Garlic: Used to add flavor, but you can omit if you wish.
  • Chicken broth: Used to make the creamy sauce. You could use another type of broth like beef, or veggie broth or stock.
  • Cream cheese: I used a circle of Bourin Garlic and Fine Herbs, but you could always use plain cream cheese and add about a tbsp of italian seasoning.
  • Heavy cream: Used to help make the sauce. You could substitute half and half, or milk, but just be aware it may change the consistency of the sauce.
  • Pasta: I used bowtie because it’s one of my favorites, but you could use whatever type of pasta you wish.
  • Cheese: I used a shredded mix of mozza and cheddar, but you can use whatever type you want, or even omit if needed.

How to make it…

  1. Brown your sausage in a large non-stick skillet over medium-high heat. Add onion and garlic.
  2. Once cooked, add pasta and chicken broth. Cook until liquid is mostly absorbed and pasta is al dente.
  3. Add heavy cream, cream cheese, and shredded cheese.
  4. Mix until melted and smooth.
  5. Enjoy.

Healthier: Add more veggies like spinach, broccoli or peas and use half and half instead of heavy cream.

Higher protein: Use protein pasta and double the amount of meat.

Vegetarian: Use tofu sausage or omit the sausage and use veggie broth instead.

Storage notes:

Refrigerate: This dish tastes even better the next day. The pasta will continue to absorb the sauce as it sits, so you can always add some chicken broth while reheating if you feel it has gotten too thick or there is not enough sauce. Store any leftovers in an airtight container in the refrigerator and enjoy within 3 to 4 days.

Freeze: I find that pasta and dairy usually doesn’t freeze and reheat very well. There has never been enough leftovers of this recipe for me to freeze so I have never personally tried it. If you do, let me know in the comments below how it went.

Ingredients

  • 1 pound Italian Sausage
  • 1 medium Onion chopped
  • 2 tbsp Garlic minced
  • 6 cups Chicken broth
  • 1 package Cream cheese I used Boursin Garlic and Fine Herbs
  • 1 cup Heavy cream
  • 1 pound Pasta I used bowtie
  • 1 cup Cheese shredded cheese

Instructions

  • Brown your sausage in a large non-stick skillet over medium high heat.
  • After a few minutes add the onion, and then when almost browned add the garlic.
  • Once sausage is browned and onion is softened, add pasta and chicken broth.
  • Cook until liquid is mostly absorbed and pasta is al dente (About 8-10 minutes).
  • Add heavy cream, cream cheese, and shredded cheese.
  • Mix until melted and smooth.
  • Enjoy.

My burnout situation…

It’s a weird feeling to know that a place that you worked for years to get a job at and have since spent so many hours of your life at, does not care about you at all.

Like when you are really passionate about what you do, and you take pride and great care in your work, to have your employer basically show you that they don’t care about you, your health, or even really see you as a basic human being is a lot to take in and accept.

I have never been a selfish person.

I was always raised to take care of the people around me, and to consider their feelings and see things from their point of view.

I was raised to work hard and always try to do my best.

So when that gets basically thrown back in your face… it’s a lot. And it is something I am struggling with right now.

I guess it’s just hard to accept that people don’t have the same heart that you do,

I wish I could expand on this, and maybe one day I will. But right now, these are just the concepts I’m struggling with currently.

Conclusion…

There is nothing wrong with craving food that is delicious, comforting and filling — which is exactly what this recipe is.

I hate that many of us were taught that certain foods are “bad foods” and certain foods are “good foods”. I am for sure becoming one of these people that thinks that you can have everything in moderation, and that balance is key for happiness, as well as for health.

But maybe that is just me.
