Easy Crockpot Broccoli Cheddar Soup

This Easy Crockpot Broccoli Cheddar Soup is the kind of cozy, creamy dinner that makes a long day feel a little softer. Everything cooks low and slow in the crockpot until the broccoli is tender and the soup is rich, cheesy, and full of comforting flavor. It’s a simple, hearty recipe that feels warm, easy, and so satisfying.

Ingredients
  

  • 2 bags Broccoli Florets or around 4 cups, fresh or frozen
  • 1 medium Onion diced
  • 4 tbsp Garlic minced
  • 2 cups Carrots shredded or matchstick
  • 4 cups Chicken Broth total (pay attention to steps)
  • 1/4 cup Cornstarch (added to 3 of the cups of chicken broth)
  • 6 cups Shredded Cheese or a small medium bag
  • 1 cup Heavy Cream
  • 1 block or round Cream Cheese
  • 1 tbsp Onion powder
  • 1 tbsp Garlic Powder
  • 1 tsp Paprika
  • Salt and Pepper to taste

Method
 

  1. Mix 3 of the cups of chicken broth with the cornstarch separately until smooth. Add your broccoli florets, shredded carrots, diced onion, minced garlic, and the chicken broth and cornstarch mixture to the crockpot. Add one more cup of chicken broth (4 total)
  2. Add onion powder, garlic powder, paprika, and salt and pepper. Cover and cook on high for 3-4 hours or low for 5-6 hours.
  3. Add shredded cheese, cream cheese and heavy cream. Mix well and let cook for another 30 minutes until melted and combined.
  4. Enjoy.
